Prep: 1. Preheat oven to 425. 2. Slice artichokes lengthwise and cut out the hairy middle. Make: 1. Place artichokes leaf-side down on counter. 2. Squeeze half a lemon over the outside and inside of each artichoke and place one garlic clove in each center pocket. 3. Drizzle the inside of each artichoke with 1/2 tablespoon of olive oil, and sprinkle liberally with salt and pepper. 4. Tightly wrap each artichoke half in large, individual foil pieces. 5. Bake foil-wrapped artichokes in a large baking dish for 45 minutes until tender (beware of steam when opening).
