Shaved Raw Asparagus with Lemon Parmesan Dressing

Ingredients

  • 1 pounds asparagus
  • 1/2 cup parmesan cheese
  • 1 1/2 tablespoons fresh lemon juice
  • 1 tablespoon warm water
  • 2 tablespoons extra-virgin olive oil
  • sea salt and freshly ground pepper, to taste

Directions

Prep: 1. Shave the asparagus into long, thin strips using a vegetable peeler. 2. Grate cheese Make: 1. Mix cheese, 3 tablespoons lemon juice, water and olive oil; 2. Toss dressing with asparagus; season to taste with salt and pepper.

Notes
