Sesame Chicken and Asparagus Stir-Fry

Ingredients

  • 1 tablespoon soy sauce (or tamari)
  • 1 tablespoon honey
  • 2 boneless skinless chicken breasts, chopped
  • 1 tablespoon extra virgin olive oil
  • 1 bunch asparagus, chopped
  • 4 cloves garlic, sliced
  • 2 scallions, chopped
  • 2 teaspoons sesame oil
  • 1 teaspoon toasted sesame seeds (optional)

Directions

Prep: 1. Remove woody ends from asparagus, chop the rest into 1 inch pieces 1. Chop: chicken, garlic, and scallions. Make: 1. In ziplock bag, combine soy sauce, honey, and chicken; coat well, then refrigerate until ready to cook. 2. Heat oil in pan over medium-high heat; add asparagus, saute about 5 minutes. Remove from pan, set aside. 3. Add chicken to pan and saute about 5 minutes. 4. Add garlic, scallions, and marinade to the pan; saute 2 minutes or until the chicken is done. 5. Remove from heat; stir in asparagus and sesame oil. Top with toasted sesame seeds (optional).
