Prep: 1. Cook couscous according to package directions. 2. Peel, devein, and rinse shrimp if needed. 3. Chop onion, garlic, ginger, and cilantro. Make: 1. Heat oil in a large pan over medium heat; add onion, cook 12 minutes, stirring occasionally. 2. Add garlic and ginger; cook 2 minutes. 3. Add wine and bring to a boil; add shrimp, simmer for 2 minutes. 4. Add snow peas; cook, stirring, for 2 minutes or until shrimp are opaque and done through. 5. Stir in cilantro, salt, and pepper. Serve on top of the couscous.
Simple and delicious! You can sub in green beans or asparagus for the peas to change it up.
