Prep: 1. Preheat oven to 400. 2. Wash, trim, and chop strawberries. Make: 1. In ziplock bag, combine chicken breasts and 1/2 cup balsamic vinegar; refrigerate 5 minutes. 2. Put chicken mixture in a baking dish, season with salt and pepper; bake 30 minutes or until chicken is cooked through. 3. Meanwhile, in a small pot bring remaining 1/2 cup balsamic vinegar to a boil; reduce heat to low and simmer for 10 minutes. Be careful not to burn it. 4. Toss together strawberries, mozzarella and basil. Serve: Chicken topped with strawberry mixture and drizzled with the warm balsamic vinegar.
