Prep: 1. Chop onion, garlic, and chard. 2. Rinse cannellini beans. Make: 1. Heat oil in pan over medium heat; add onion, garlic and chard stems. Cook about 5 minutes or until softened. 2. Add one cup of broth, cook and stir, until almost absorbed; add chard leaves, cannellini beans and remaining 1/2 cup of broth. Cook, stirring, for 2 minutes or until desired consistency. 3. Add lemon juice and thyme; season with salt, pepper and grated lemon zest.
We love to add 4 tablespoons of grated Parmesan (or other hard cheese) along with the lemon juice in step 3.
