Pan-Fried Trout with Scallions

Ingredients

  • 2 whole trout
  • sea salt and freshly ground pepper, to taste
  • 1 tablespoon extra virgin olive oil
  • 3 scallions, chopped
  • 1/2 cup dry white wine
  • 1 tablespoon unsalted butter

Directions

Prep: 1. Chop scallions. Make: 1. Open each trout like a book and sprinkle the inside with salt and pepper. 2. Heat olive oil in a pan over medium high heat and sauté trout about 4 minutes per side. 3. Transfer trout to plate. 4. In the same pan, melt butter, then add the scallions and wine, sauté. 5. Serve saucy scallions over trout.
