Prep: 1. Preheat the oven to 350. 2. Shred carrots and zucchini. Make: 1. In a large bowl, combine the carrots, zucchini, basil, rosemary, garlic powder, and meat. 2. Add the eggs and make sure it is evenly combined. 3. Place the meat mixture into a loaf pan and spread the Dijon mustard over the top. 4. Bake for 1 hour or until cooked through.
We hate "hiding" veggies in things so we prefer to think of these as extra veggies!
