Sage & Beef Stuffed Zucchini

Ingredients

  • 2 tablespoon fresh sage, finely chopped
  • 2 tablespoons flat leaf parsley, finely chopped
  • 2 clove garlic chopped
  • 1/2 large shallot finely chopped
  • 2 large zucchinis
  • 1 pound ground beef
  • 1 1/2 teaspoons coconut aminos
  • 1/2 teaspoon chipotle chili powder
  • 1 egg beaten
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Directions

Prep: 1. Chop sage, parsley, garlic and shallot. 2. Cut the zucchini in half lengthwise and scoop out the seeds, chop about 1/2 of the seeds and reserve for the stuffing. 3. Preheat oven to 350 degrees. Make: 1. In a medium bowl, mix together the ground beef, with the rest of the ingredients and the reserved zucchini seeds. 2. Place the meat mixture equally into all of the zucchini halves; mixture should be piled up over the top. Place the filled zucchini halves into a baking dish. 3. Bake for approximately 30 minutes.

Notes

You can substitute soy sauce for the aminos if you like. These are also great topped with hot sauce. Another great variation is to chop up the zucchinis and then stuff the whole mixture into bell peppers. Depending on the size of your zucchini you may want to reduce the amount of beef, or just form the extra into patties. These are best with extremely lean ground beef.
