Thai Meatball Curry

Ingredients

  • 8 garlic cloves, minced
  • 2 inch fresh ginger, minced
  • 1/4 cup of Thai basil, minced
  • 1 red onion, chopped
  • 1 pound ground beef
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fish sauce
  • 3 tablespoon red curry paste
  • 2 eggs, beaten
  • 1 (15 ounce) canned coconut milk
  • salt and pepper, adjust to taste
  • 1 lime, for serving

Directions

Prep: 1. Mince garlic, ginger, basil, and red onion. Make: 1. In a large bowl, mix beef, egg, fish sauce, basil and half of the: garlic, ginger, onion and chilies. Form into little balls. 2. Heat oil in a pan on medium heat and fry the meatballs until golden. Set aside on a paper towel lined plate. 3. Add remaining onions to the same pan, once the onions become golden and soft, about 10 minutes, add the remaining ginger, garlic and chilies. 5. After a minute, add curry paste and stir-fry for 1-2 minutes. Then add the coconut milk and mix until combined. 6. Put meatballs back in the pan and simmer on low heat for about 10 minutes. 7. Serve with lime wedges and enjoy.

Notes

If you have coconut oil on hand you can use that instead of the olive oil to enhance the flavor of the meatballs.I If you like it spicier add up to 3 Thai bird eye chilies or a red serrano pepper!
