Prep: 1. Chop garlic. Make: 1. Heat oil in a skillet over medium-high. Add garlic, coriander and cayenne and cook 1 minute. 2. Stir in lamb and cook, breaking up meat with a wooden spoon, until crispy and browned, 6-8 minutes. 3. Season with salt, pepper, and 2 teaspoons lemon juice. 4. In a dry skillet over medium high heat warm/char tortillas, about 1 minute per side. 5. Divide meat among tortillas (or lettuce wraps) and top with feta and arugula.
For a low carb option, lettuce wraps are always great!
