Asian Ground Beef, Mushrooms, and Broccoli

Ingredients

  • 1 small onion, roughly chopped
  • 1 pound of mushrooms, thinly sliced
  • 1 head of broccoli, shredded
  • 1 cup of carrots, shredded
  • 3 cloves of garlic, minced
  • 2 scallions, thinly sliced
  • 3 tablespoons cilantro, coarsely chopped
  • 2 tablespoons of extra virgin olive oil
  • 1 pound of ground beef
  • 4 tablespoons of fish sauce
  • 4 tablespoons of apple cider vinegar
  • 4 tablespoons coconut aminos
  • sea salt and freshly ground black pepper

Directions

Prep: 1. Finely chop onions. Mince garlic. 2. Slice mushrooms. Shred carrots and broccoli. (To shred broccoli chop of the tops of the florets and then grate the stem, use both the florets and the stem) 3. Slice scallions and cilantro. Make: 1. Melt olive oil over medium heat Saute onions and mushrooms for 5 minutes, add garlic and stir for about 30 seconds. 2. Add the ground beef and cook, breaking up meat, for about 7 minutes or until beef is no longer pink. 3, Then add fish sauce, apple cider vinegar, and coconut aminos, adjust any seasonings for personal taste. 4. Add the shredded broccoli and carrots and cook until veggies are soft, 1-5 minutes depending on taste. Then add cilantro and scallions and stir for 2 more minutes. 5. Serve plain or with your favorite hot sauce.

Notes

If you don't avoid soy you can use soy sauce or tamari instead of the aminos. Or you can leave them out entirely.
