Prep: 1. Slice onion and pepper. Make: 1. Heat oil in a skillet over medium high heat. Add onion and peppers and saute, stirring occasionally, until soft and beginning to caramelize, about 10-15 minutes. 2. Meanwhile, mix together ground turkey, breadcrumbs, Italian seasoning, and egg. Form into 1/2 inch balls. 3. In a separate skillet, heat oil over medium heat and fry meatballs until done through, about 3-4 minutes per side. 4. Toast buns in the toaster or under the broiler. 5. Place 4-5 meatballs on each roll and top with peppers and onions.
You can use any type of ground meat you like for the meatballs. This is a great way to use up any leftover meatballs (or even slices of meatloaf) that you might have!
