Prep: 1. Pit, peel, and dice mango. 2. Chop bell pepper and scallion. 3. Juice lime. Make: 1. Heat oil in a skillet over medium high heat. Add beef and cook until browned, about 3 minutes. 2. Stir in beans and chili powder. Cook 3 minutes, or until beef is done and beans are warmed through. 3. In medium bowl, combine mango, bell pepper, scallions and lime juice for salsa; season with salt and pepper taste. 4. In a large, dry skillet, toast tortillas over high until golden and crispy, 2 minutes per side. Top with meat mixture and salsa.
