One Pan Chicken Alfredo

Ingredients

  • 1 1/4 pounds of boneless skinless chicken breasts
  • 4 clove of garlic minced
  • 2 tablespoons of extra virgin olive oil
  • 4 cups chicken broth
  • 2 cups of heavy cream
  • 1 pound of penne pasta
  • 4 cups of parmesan cheese
  • salt and pepper, to taste

Directions

Prep: 1. Cut chicken breasts into 1 inch pieces, season to taste with salt and pepper 2. Mince garlic. Make: 1. Brown chicken in olive oil over medium high heat. 2. Add minced garlic and saute for about one minute. 3. Add chicken broth, cream, and uncooked pasta to pan and stir. 4. Bring to a boil, then cover and reduce to a simmer for about 15 minutes, stirring occasionally. 5. Remove from heat and stir in shredded parmesan cheese and salt and pepper to taste.

Notes

You can substitute whole milk for the cream in this, just let the sauce cook for a couple minutes before adding the pasta.
