Prep: 1. Chop chives. Make: 1. Heat olive oil over medium-high heat in a skillet. 2. Lightly beat eggs, then add chives and salt and pepper. 3. Pour egg mixture into skillet, then drop spoonfuls of ricotta on top of the mixture. Cook for about two minutes. 4. Lower heat to medium, cover and cook on the stove top until set, between 10 and 12 minutes.
