Sugar Snap Peas with Mint

Ingredients

  • 1 pound sugar snap peas
  • 1/2 orange, juiced
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup tightly packed mint leaves
  • sea salt and pepper, to taste

Directions

Prep: 1. Boil water to blanch peas. 2. Juice orange. 3. Chop mint. Prep: 1. Blanch the peas in boiling water for about 20 to 30 seconds. Drain and rinse under cold water. 2. Whisk together orange juice and olive oil. 3. Toss vinaigrette with the peas, mint, and salt and pepper.
