Prep: 1. Preheat oven to 350. Line a baking sheet with aluminum foil first, then a layer of parchment paper. 2. Cut salmon into 4 fillets (if necessary) 3. Juice lemon. Make: 1. Lay each piece of salmon on parchment paper and season with salt, pepper, and red pepper flakes. Top with oil, lemon juice and a rosemary sprig. 2. Fold up the sides of the foil over the parchment and salmon to make a packet. 3. Place packets on a baking sheet and bake 20 minutes, or until salmon is done through.
Mix up the herbs here - lemon thyme, chives, oregano - they all work! This flavorful salmon is simple enough for a weeknight or elegant enough for a dinner party. If you want to take it up a notch use 1/2 cup of white wine in each packet in place of the lemon juice. This can also be done on the grill. Simply place packet on a preheated grill.
