Cumin Spiced Flank Steak with Peppers

Ingredients

  • 2 red bell peppers
  • 1 onion, chopped
  • 1 cup cherry tomatoes
  • 2 tablespoons extra virgin olive oil
  • sea salt and black pepper, to taste
  • 1 1/2 pound flank steak
  • 2 teaspoon ground cumin
  • 2 limes

Directions

Prep: 1. Cut peppers into 2 inch strips. 2. Chop onion. 3. Juice 1 lime (for about 1 tablespoon juice). Cut other lime into wedges for serving. Make: 1. Heat oil over medium-high heat in a skillet. Saute onion and peppers for 5 minutes. 2. Season the steak with the cumin and salt and pepper to taste. 3. Reduce heat to medium and place steak and tomatoes in skillet, alongside the peppers and onion, and cook steak to desired doneness, 5 to 6 minutes per side for medium-rare. Remove from heat, tent with foil and let rest for at least 5 minutes before slicing. 4. While steak is resting, add lime juice to the peppers and onions and mix to combine. Serve the steak topped with the tomatoes, peppers, and onions with lime wedges on the side.

Notes

If you like a little spice add 1 teaspoon chili powder along with the cumin.
