Prep: 1. Grate cheese. 2. Cut lemon into wedges. Make: 1. Get out three shallow bowls 2. Bowl #1 - Beat egg. 3. Bowl #2 - Combine the panko, grated parmesan and salt and pepper. 4. Heat the oil in a large non-stick skillet over medium heat. 5. Dip one piece of pork into the egg and then press both sides of into the cheese mixture until it’s covered. Place in skillet and repeat with remaining pork. 6. Cook 3-4 minutes per side or until lightly browned and cooked through, internal temperature should be 145. 7. Plate the pork and squeeze 1 lemon wedge over each piece.
This is best with thin sliced pork chops. If you're using thicker cut pork chops cover the skillet while cooking and increase cooking time by about 1 minute per side. You can also use freshly grated Parmesan or any other hard cheese if you prefer.
