Prep: 1. Preheat oven to 500. Line a baking sheet with foil. 2. Cut sweet potatoes in 1/2 inch cubes. Make: 1. Mix brown sugar, chile powder, 1/2 tsp of cumin, the cinnamon, garlic powder and salt; rub over tenderloin. 2. Place pork on one side of the baking sheet and sweet potatoes on the other. 3. Drizzle potatoes with olive oil and toss with remaining 1/2 teaspoon cumin. 4. Place baking sheet in oven and roast for 10 minutes. 5. Toss potatoes and turn pork. Roast 8 to 10 minutes more until an instant-read thermometer inserted in the center of the pork reads 155 and potatoes are tender. 6. While pork and potatoes are roasting, pit, peel and chop the mango. Chop bell pepper and juice lime. Toss together. 7. When pork and potatoes are done, slice pork, top with mango salsa and serve with potatoes.
