Sweet and Sour Pork and Vegetable Stir Fry

Ingredients

  • 2 tablespoons hoisin sauce
  • 1 tablespoon fresh lime juice
  • 1 tablespoon water
  • 2 tablespoons extra virgin olive oil
  • 4 carrots
  • 2 yellow bell pepper, cut into strips
  • 1/2 pound pork tenderloin, thinly sliced
  • sea salt and pepper, to taste

Directions

Prep: 1. Juice lime. 2. Shred carrots. 3. Slice bell pepper and pork loin, season with salt and pepper. Make: 1. In a small bowl, whisk together the hoisin, lime juice and water; set aside. 2. Heat 1 tablespoon oil in a large skillet over medium heat. Add the carrots and bell pepper and cook, tossing frequently, until the vegetables are just tender, 4 to 5 minutes. Transfer to a bowl. 3. Return the skillet to medium-high heat and heat the remaining oil. Add pork and cook, turning once, about 3 to 4 minutes. 4. Add the hoisin mixture and cook for 1 minute. 5. Return the vegetables to the skillet and cook, tossing, until heated through, about 2 minutes. 6. Ensure pork is cooked through and serve.
