Prep: 1. Heat oven to 400. 2. Cut cod into 4 pieces (if necessary) 3. Grate ginger. Make: 1. Combine the marmalade, soy sauce and ginger. 2. Tear off four pieces of parchment paper or aluminum foil 3. Place one piece of fish on each square and spoon the marmalade mixture over the fish. Fold over packet and fold each edge over three times to seal. 4. Place packets on baking sheet and bake for 15 minutes. 5. Remove from oven and either serve each person their own packet, or unwrap and serve.
